"Soy protein isolate (SPI) is one of the excellent materials for edible film production instead of polysaccharides, lipid or the combination of these components. Incorporation of antimicrobial agents may increase the functional packaging of films and enhance a shelf life. The aim of this study was to develop antimicrobial film based on SPI with addition of curcumin extract (CE) and ZnO NPs. The effect of CE and ZnO-NPs addition are investigated by measuring physico-chemical properties such as water vapor transmission rate (WVTR), tensile strength (TS), percentage elongation at break (%Eb), color, and antimicrobial activity. In this study, 5 grams of SPI were mixed into 100 mL distilled water and added with ZnO NPs (0%, 1% and 2.5% w/w SPI) and curcumin extract (0% and 2.5% w/w SPI). The results showed that the addition of ZnO-NPs and CE influenced WVTR value, TS, %Eb, color, and antimicrobial activity of the SPI films. SPI films without ZnO NPs and CE has a WVTR value of 21.32±0.89 g/m2/hour, TS value of 2.40±0.31 MPa, and %Eb of 70.27±0.31%. The addition of ZnO-NPs could increase the TS and %Eb of SPI films but had no significant effect on WVTR value. The combination with CE decreased WVTR, it means improve water vapor barrier, but decreasing TS and %Eb. A pure SPI film solutions did not have inhibitory effect against E.coli, indicated by its inhibition zone diameters was 0.0 mm. The SPI solutions added with ZnO-NPs at the amount of 1.0 and 2.5 % by weight of SPI showed inhibition zone diameter of 2.98±0.80 mm and 4.47±0.30 mm respectively; added with 2.5% of CE had inhibition zone diameter of 3.66±1.10 mm. There was no interaction effect between ZnO-NPs and CE on the antimicrobial activity. These results revealed that the addition of CE and ZnO NPs could improved the mechanical and water barrier properties of SPI films and provide antimicrobial activity on the obtained SPI films."^^ .
